How will having one DUI from college affect finding jobs as an attorney in the future?

Continue with your present plans with a detour to AA. As long as you are not charged with a felony you should be OK.
It shouldn’t have an impact as long as you do not get involved in drunk driving cases.
We have two people in the Federal Executive Office who have DUI’s on their records as do many lawyers and judges.
Hopefully you didn’t manage to kill anybody.

most DUI charges are non expungeable in most states

By the time you get done with law school, the DUI will be old enough that it will not, in itself, prevent you from practicing law. Just stay out of trouble!!!!
In my 16 years in law enforcement, I have seen three local attorneys arrested for OWI (one twice). They we not disbarred for this.
Everyone makes mistakes, they are not looking for someone perfect, just for someone that is honest and takes responsibility for his actions. It may come up during an interview, so have a statement prepared as to how it effected your life and what changes you made because of it.
